Tuskon Salmon

Ingredients:

  • Fresh Salmon (Skin On)
  • ½ Cup Sundried Tomatoes
  • 3 Cloves Garlic, Minced
  • ¼ Cup Capers
  • ½ Cup Artichoke Spinach
  • 1 Cup Heavy Whipping Cream
  • 1 Cup Essie Marie’s Lemonette Dressing
  • Pasta (Spaghetti or Squash)

Instructions:

  1. Sear the Salmon – Heat a skillet over medium-high heat. Sear salmon skin-side down for 4 minutes, then flip and cook for another 4 minutes. Remove from skillet and set aside.
  2. Prepare the Sauce – In the same skillet, sauté sundried tomatoes, garlic, capers, and artichoke spinach until fragrant.
  3. Add the Cream & Dressing – Pour in heavy whipping cream and Essie Maries Lemonette Dressing, stirring well to combine.
  4. Simmer with Salmon – Return the seared salmon to the skillet and let it simmer in the sauce for a few minutes.
  5. Prepare the Pasta – Cook spaghetti or squash to preferred texture, then drain and plate.
  6. Serve & Enjoy! – Place the salmon over the pasta and generously spoon the sauce on top.
